This recipe is for a fancier variant of traditional cornbread. It is softer and with the right kick of red pepper. Best served with sauerkraut, pickles, or vegan sour cream.
Proja (Cyrillic: Проја) is a Balkan dish made of corn flour, baking powder, sunflower oil, water or sparkling water, and salt.
It has been popular in times of widespread poverty, mostly before the 1950s, and remains a common everyday meal. Now it can include the additional ingredients flour, eggs, and yogurt.
Cornbread with Red Pepper Spread -Ajvar
Ingredients
- 2 cups corn flour
- 1 cups flour
- 1 tsp baking powder
- 1 3/4 cups water or sparkling water
- 1/2 cup oil
- 4 tbsp red pepper spread-ajvar
- 1 tsp salt
Instructions
- Mix all the ingredients with a mixer. Grease the pan or molds with oil, pour the mixture and bake in a preheated oven at 390 F for 20 minutes.
