Goulash / Gulyás / Gulaš
This recipe is for one delicious Vegan goulash that will warm you up and delight you with its taste. It prepares pretty quickly. An essential ingredient is soft and juicy mushrooms, which, combine with a couple of spices, give a divine lunch.
Traditional Goulash is a soup or stew of meat and vegetables seasoned with paprika and other spices. Originating in Hungary, goulash is a standard meal predominantly eaten in Central Europe and in other parts of Europe. It is one of the national dishes of Hungary and a symbol of the country.
Mushroom Goulash
Ingredients
- 2 1/2 cups mushrooms
- 1 carrot
- 1 Celery stalk
- 1 onion
- 1 tsp ground hot paprika
- 1 tsp ground smoked paprika
- 1-2 cup water or tomato juice for more flavor
- Thyme or rosemary
- 3 tbsp oil
- 2 bay leaves
- 1/2 tsp salt
- pepper
Instructions
- Peel an onion and a carrot and cut it into small cubes, clean the mushrooms and cut into large pieces.
- Heat the oil, add onion and carrot and cook until golden brown and then add the mushrooms. Mushrooms will release a lot of water and therefore either there is no need to add water or add very little.
- Add spices, water or tomato juice and cook for about 10 minutes.
- If it is too liquid, add a teaspoon of thickener or flour.

I definitley wil make this one of these days, but I miss the tomato juice (named in step 3) in the list of ingredients. So I was wondering how much tomato juice should be added?

thank you for your comment and for finding my error. You can put water or tomato juice (that I found to give an excellent acidic kick), 1-2 cups. If you prefer thicker goulash, put less liquid.
