Mushroom Goulash

Ingredients
  

  • 2 1/2 cups mushrooms
  • 1 carrot
  • 1 Celery stalk
  • 1 onion
  • 1 tsp ground hot paprika
  • 1 tsp ground smoked paprika
  • 1-2 cup water or tomato juice for more flavor
  • Thyme or rosemary
  • 3 tbsp oil
  • 2 bay leaves
  • 1/2 tsp salt
  • pepper

Instructions
 

  • Peel an onion and a carrot and cut it into small cubes, clean the mushrooms and cut into large pieces.
  • Heat the oil, add onion and carrot and cook until golden brown and then add the mushrooms. Mushrooms will release a lot of water and therefore either there is no need to add water or add very little.
  • Add spices, water or tomato juiceĀ and cook for about 10 minutes.
  • If it is too liquid, add a teaspoon of thickener or flour.

Notes

Serve with rice, cooked pasta or mashed potatoes
